Cucumber Edamame Salad with Coconut Curry Dressing
This is a very simple salad to go with any Asian inspired meal. Add an Asian glazed pork loin or some lemongrass marinated shrimp or tofu to make this an entrée.

INGREDIENTS
For the Cucumber Edamame Salad
1 English cucumber, thinly sliced (with a mandolin if you have one)
½ cup cooked and shelled Edamame beans
2 handfuls of baby spinach
1 handful fresh basil
For Coconut Curry Dressing (makes extra)
½ cup coconut milk
Juice of 1 lime
1 teaspoon soy sauce
½ teaspoon red curry paste
½ teaspoon agave syrup
½ teaspoon Sriracha hot sauce (or your favourite hot sauce)
DIRECTIONS
The instructions on this one are very straightforward. Whisk together all ingredients for the dressing. Toss together all ingredients for the salad and drizzle with the dressing.
