Dill Pickle Chip Mozza Sticks

PSA: who needs breadcrumbs when you can use flavoured potato chips?! This classic appetizer gets some extra crunch and flavor by using dill pickle potato chips as the coating. You could swap any flavor and it would be just as delicious.

Dill Pickle Mozza Sticks

Yield: ~30 mozza sticks

INGREDIENTS

  • 2 (220g) bags dill pickle potato chips

  • ½ cup all-purpose flour

  • ½ tsp. garlic powder

  • ½ tsp. dried dill

  • 2 large eggs

  • 1 tbsp. milk

  • 1 package (336g) mozzarella cheese strings, cut in half

  • Oil for frying (I used canola)

  • 1 cup marinara sauce for dipping

  • Chopped fresh dill for garnish (optional)

DIRECTIONS

Using a food processor, pulse the potato chips into small crumbs. The smaller the pieces, the easier the mozza sticks will be to coat!

Place the potato chips in bowl. In a separate bowl, whisk together the flour, garlic powder and dried dill. In a third bowl, whisk together the eggs and the milk.

Line a large baking sheet or serving platter with parchment paper. Take a halved cheese string, dip it in the egg mixture, then the flour, then back to the egg mixture, then into the potato chips, back into the egg and finally once more in the potato chips. Shake off any excess between steps. in the end, you should have a very well coated cheese string on all sides. Tip: use one hand for retrieving the cheese string from the wet ingredients and the other hand for the dry - this will avoid coating your fingers and creating a major mess.

Once complete, place the coated mozza stick on the lined baking sheet. Continue with remaining cheese string halves. Once they are all done, place them in the freezer for an hour, or overnight.

Heat approximately 1-inch of oil in a large heavy-bottomed pot over medium-high. Fry the mozza sticks for ~30 seconds per side, or until golden brown on all sides and melty on the inside. Place on a bed of paper towels to absorb any extra grease.

Serve while hot with a side of marinara sauce and chopped fresh dill if using.
