Chipotle Lime Roasted Cauliflower
Time to spice up your vegetable side. I can’t handle a side of steamed broccoli with a plain chicken breast when I’m trying to be healthy. Any kind of diet along those lines is so bland and unappealing that I’m bound to fail. So here’s one of many solutions. Hooray for cauliflower!
Chipotle Lime Roasted Cauliflower

Cook time: 30 minutes
Total time: 35 minutes
Yield: 4 servings (as a side)
INGREDIENTS
1 head cauliflower
2 tablespoons olive oil
½ teaspoon chipotle chili pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground coriander
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon cracked black pepper
Juice of ½ lime
1 handful fresh cilantro, chopped
Drizzle of your favourite hot sauce
DIRECTIONS
Preheat oven to 425F. Cut cauliflower into florets. In a large bowl, toss the cauliflower with olive oil, chipotle chilli pepper, garlic powder, onion powder, coriander, cumin, salt and pepper.
Spread out cauliflower on a large baking sheet. Cook for 30 minutes, turning once halfway. Remove from oven and squeeze fresh lime juice over top. Garnish with cilantro and hot sauce and serve.
