Perfect Sushi Rice
I must admit that making rice is not my forte. But if you follow this recipe your sushi rice will be perfect. I promise.
Perfect Sushi Rice

Cook time: 15 minutes
Total time: 1 hour 15 minutes
Yield: 2 cups rice
INGREDIENTS
1 cup sushi rice
1 cup water
2 tbps rice vinegar
1 tbsp sugar
1 tsp salt
2 tbsp mirin
DIRECTIONS
Rinse the rice 4 times with a fine mesh sieve. Let the rice sit in sieve in the sink to drain the extra water for 45 minutes. In a medium sized bowl whisk together vinegar, sugar, salt and mirin and set aside.
Add the drained rice and 1 cup of water to a medium sized saucepan. Bring this to a boil and then reduce to a simmer. Cover with a lid and cook for 15 minutes. It is important that you do not remove the lid at any point in the cooking process. After 15 minutes is up, remove the pan from the heat but do not open the lid. Let it rest for 10 minutes and then remove the lid and transfer the rice to a large glass dish. Fan the rice while slowly and evenly pouring the vinegar mixture over top. Gently stir the rice to combine. Let cool slightly before using (the rice should be warm when making your sushi for optimal results).
