Quick and Easy Cinnamon Apple Fritters with Vanilla Glaze

There are so many ways to enjoy Christmas, too! Many like to get away by retreating to cabins and ski-resorts, while others might love to catch a new rendition of a classic play. If you're like me, watching the neighbourhood light up with all of its dazzling decorations is more than enough to put me in the holiday spirit (although I'm also not opposed to snuggling up with a cheesy, feel-good Christmas movie, either).
However, despite all the lights, Santa hats, and joy, there is one fact we all come to realize sooner or later: Christmas is one of the craziest, most hectic days of the year!
There are gifts to wrap, family and friends to see, and of course, delicious food to eat. Finding the time for every little thing on your holiday to-do list can be difficult, but I'm here to tell you it'll all get done—you just need to know a few simple tricks that'll save you heaps of time and energy.
One place you can start saving yourself some effort is in the kitchen. Now, the holidays are well-known for their delicious dinners and tasty treats, but you can still make something truly extraordinary with only a few simple ingredients and a whole lot of creativity!
The kitchen overflows with creative possibilities. When I was a kid, my mother would start Christmas morning off with nothing more than a turkey and a whole pile of vegetables, spices, and sauces. Within hours, she would have food flying in from all corners of the house. Come to think of it, I think she would organize different rooms according to palettes!
This goes without saying, but not everybody has the same experience as my mother when it comes to making Christmas an experience as well as a holiday. So what are some easy, simple ways you can make Christmas one for the history books?
One of my go-to snacks is the absolutely delectable cinnamon apple fritters with vanilla glaze. These pastries are an excellent choice for when you're short on time but still want to deliver something that'll keep the holiday spirits high all day long. You can even make them when you've only got a couple of minutes on Christmas morning before the kids start tearing their way through their gifts!

Quick and Easy Cinnamon Apple Fritters with Vanilla Glaze
Prep time: 15 minutes (+15 minutes inactive)
Cook time: 15 minutes
Total time: 30 minutes
Yield: ~14 fritters
INGREDIENTS
For the Apple Fitters
¾ cup buttermilk
2 eggs
1.5 cups all-purpose flour
¼ cup brown sugar
1 tbsp. Cinnamon
½ tsp. Salt
2 tsp. Baking powder
2 green apples, unpeeled, cored and cut in a small dice
Canola oil for frying
For the Glaze
2 cups icing sugar
1/4 cup buttermilk
1 tsp vanilla
DIRECTIONS
Place the buttermilk and the eggs in a blender, and blend until smooth (just a few pulses should do). Add in the flour, sugar, cinnamon, salt and baking powder and blend into a smooth batter. Let the batter rest for approximately 15 minutes before using.
While the batter is resting, heat around 2 inches of oil in a heavy skillet or dutch oven to 375. Before you fry the fritters, fold the apples into the batter. Drop around 1/4 cup of batter per fritter into the oil, being careful not to crowd the pan.
Cook each fritter for around 2 minutes per side, or until golden brown and crispy. Remove from the oil with a skimmer or a slotted spoon and place on paper towels to absorb the extra grease. Repeat until the batter is finished.
Whisk together all ingredients for the glaze. Dunk each fritter in, flipping it to ensure it’s fully covered, and place each on a wire rack (with some paper towel underneath to catch the drips) to cool and let the glaze harden.
Dig in!
