Open-faced Pesto BOAT
This was originally going to be called a bacon, pesto, avocado, red onion and tomato sandwich but that’s a mouthful. So instead the pesto BOAT was created. Someone made the name BLT mainstream so this is dedicated to them.

Yield: 2 open-faced sandwiches
INGREDIENTS
4 slices of delicious bread, toasted
4 slices of bacon, cooked
½ an avocado
1 tomato, sliced
finely sliced red onion
2 tablespoons pesto
salt and pepper to taste
DIRECTIONS
Fry your bacon, toast your bread and layer the rest of the ingredients, drizzling pesto over top. If you’re feeling crazy butter the bread after it’s toasted & dig in!
