Salted Caramel Popcorn with Chocolate Drizzle
For part 4 of my holiday gift guide I am presenting you with gourmet popcorn. Noticed that none of these recipes are low calorie? It’s because they are meant to be gifts. Fatten up your friends and family and no one will notice your weight gain over the holidays ;) Eat this popcorn on it’s own or put it on top of your favourite ice cream for a nice crunch.
Salted Caramel Popcorn with Chocolate Drizzle

Cook time: 30 minutes
Total time: 40 minutes
Yield: approximately 16 cups
INGREDIENTS
½ cup popcorn kernels
1 cup butter (salted)
1 cup brown sugar
½ cup white corn syrup
2 teaspoons sea salt
½ cup chocolate chips
½ teaspoon coconut oil
DIRECTIONS
Preheat oven to 300F. Pop the kernels in an air popper or on the stovetop and place in a large bowl. In a medium sized saucepan melt the butter, brown sugar, corn syrup and 1 teaspoon of salt over medium heat, stirring to combine. Bring the mixture to a light boil and then leave it untouched for 4 minutes. Pour the caramel sauce overtop of the popcorn and stir gently to combine. Spread the coated popcorn evenly over a large parchment lined baking sheet and sprinkle with remaining teaspoon of salt. Place in the oven and cook for 30 minutes, stirring halfway through cooking time.
When the popcorn has only a few minutes left, melt the chocolate and coconut oil in the microwave and stir. Once the popcorn is out of the oven, drizzle the chocolate sauce overtop and let cool completely. Break up any large pieces and serve.
