Stuffed Zucchini Boats
I’m cutting out the carbs with these easy, meaty, cheesy, zucchini boats. Perfect weeknight meal ready in less than 30 minutes!
Stuffed Zucchini Boats

INGREDIENTS
3 large zucchini, sliced lengthwise with the middles scooped out
1 cup sliced mushrooms
1 teaspoon canola oil
3 spicy chicken sausages, casings removed (use GF if celiac)
¼ cup of your favourite jarred tomato sauce
½ cup shredded mozzarella cheese
fresh basil for garnish
DIRECTIONS
Preheat your oven to 400F.
In a large skillet heat the oil over medium heat. Fry the sausages & mushrooms until fully cooked, breaking up the meat into small pieces as you go. Pour tomato sauce over the cooked sausage/ mushrooms and stir to combine. Fill each hollowed out zucchini boat with the sausage and place in a baking dish. Top evenly with grated mozzarella cheese. Bake in the oven for 15 minutes. Garnish with fresh basil and enjoy!
