4 Ingredient Prosciutto-Wrapped Prawns with Peanut Satay Sauce
Here’s a quick and easy appetizer idea for your next gathering. As the name suggests, it only requires 4 ingredients and some metal or wooden skewers. Tip: if you can remember, soak your wooden skewers overnight to be sure they won’t burn on the grill or in the oven!
4 Ingredient Prosciutto-Wrapped Prawns with Peanut Satay Sauce
Prep time: 20 minutes + 30 minutes inactive
Cook time: 6 minutes
Total time: 26 minutes + 30 minutes inactive
Yield: ~15 skewers
INGREDIENTS
340g (0.75 lb.) frozen jumbo prawns, thawed, deveined & shell removed
15 large basil leaves (or enough to wrap 1 large leaf of 2 small leaves around each prawn)
5 large, slices of prosciutto, each sliced lengthwise into 3 strips
½ cup store-bought peanut satay sauce
DIRECTIONS
If you are using wooden skewers, soak them in warm water for a minimum of 1 hour or overnight. This will prevent them from burning once on the grill. Score the jumbo prawns in 2 or 3 spots on their belly to get them to lay flat. In a large rectangular baking dish or sheet pan, pour in ¼ of a cup of peanut sauce. Thread each prawn onto its own skewer. Wrap with a basil leaf, then with a prosciutto strip, and place it on top of the sauce in the baking sheet/pan. Top with remaining ¼ cup of peanut sauce. Refrigerate and marinate for 30 minutes.
Preheat your grill to medium-high, and lightly grease it. You can also choose to broil the prawns if that is easier for you. Cook the skewers for ~3 minutes per side, or until the prawns are pink and opaque and the prosciutto is crispy. Serve hot!
