Cheesy, Beefy, Avocado Quesadillas

Yield: 4-6 servings
INGREDIENTS
12 medium sized flour tortillas
400g extra lean ground beef
1 cup shredded Monterey Jack
1 cup shredded cheddar
2 tablespoons taco seasoning
2 tablespoons water
1 white onion, chopped
1 serrano pepper, minced
2 avocados, halved, pitted and chopped
Handful cilantro, roughly chopped
DIRECTIONS
Cook ground beef in a large sauté pan over medium high heat, breaking it into pieces as it cooks. After 3 minutes add in chopped onion and serrano pepper. Continue to cook until meat is browned and crispy. Drain any excess fat and add in taco seasoning and water, stirring to combine.
Preheat oven to 400F. Top 6 of the 12 tortillas with both types of cheese, the ground beef mixture, avocados pieces and chopped cilantro. Top them with the remaining 6 tortillas and place on parchment lined baking sheets. Cook in the oven until the cheese has melted and the edges of the tortillas are golden (approximately 8-10 minutes). Cut and serve with Creamy Cilantro Dipping Sauce.

Making lasagna is a labour of love. It’s time consuming but the end result is well worth it. Plus this feeds a small crowd! This recipe will yield extra meat sauce, which you will be able to freeze and serve over pasta for a quick weeknight meal whenever you are running low on time. I tried to sneak in some extra vegetables in this recipe to make up for the overload of cheese… as if it makes a difference.
