Easy Marinated Tomato Salad
When it’s BBQ season sometimes you want something a little healthier than a potato or pasta salad to accompany your hotdog/ hamburger situation. Enter this very simple marinated tomato salad. The trick is getting the best quality tomatoes you can get your hands on!
Easy Marinated Tomato Salad

Yield: 4-6 servings
INGREDIENTS
6 medium or large hothouse or beefsteak tomatoes, cut into bite sized pieces
1 handful fresh dill, chopped
1 handful fresh basil, chopped
Juice of half a lemon
2 tbsp. extra virgin olive oil
Salt and pepper to taste
DIRECTIONS
Place tomatoes, dill and basil in a large bowl. In a small bowl, whisk together lemon juice, olive oil and s&p. Pour overtop of the tomatoes and herbs and stir to combine. Let marinate at in the fridge for 2 hours, stirring occasionally, or until ready to serve.
